Salmon Wrap With Spicy Mayo: What to Eat for Lunch

The Salmon Wrap recipe below was inspired by my indulgence in ordering food through Uber Eats during the start of the pandemic. I was using the app frequently and eventually I came across a restaurant called Local Green Atlanta. Located in the heart of Atlanta, they specialize in offering healthy alternatives to fast food. What caught my eye was the salmon wrap. It was super fresh and flavorful, so I decided to create my own version.

As a kid, my mom would cook salmon croquettes. She would use canned salmon, season it up, and fry it up! I used the same technique for this recipe.

If you’re looking to eat a light lunch or dinner, this meal might interest you. Using fresh salmon is a great option for this recipe also because it’s not as high in sodium. Remember that anything canned may contain lots of salt, so try to opt for fresher ingredients when possible.

What Your Grocery List Should Look Like

  • Canned salmon or fresh salmon
  • Spinach wraps
  • Red pepper
  • Red Onion
  • Tomato
  • Carrot
  • Shredded Lettuce
  • Mozzarella cheese
  • 1 egg
  • Olive Oil (or any oil of your choice)
  • Mayo
  • Siracha
  • Seasoning of your choice

How to Prepare the Salmon Wrap

First, you’ll want to dice or mince your ingredients before cooking, so I diced the red pepper, red onion, tomato, and carrot. Next, to prepare the canned salmon for cooking, place the salmon in a medium sized bowl and remove any visible bones from the salmon. After removing the bones, add your preferred seasonings, the diced red peppers, and the egg to the salmon, then I mixed all of these ingredients together. After everything is mixed together, form the patties using your hands (similar to hamburger patties). I added oil to a pan and fried the patties in olive oil, over medium heat.

It doesn’t take the patties long to cook, so I would recommend a minute of cooking on each side, or until patties are golden brown.

While the patties are cooking, it’s a great time to prepare your spicy mayo. It’s literally two ingredients! Take the mayo and siracha and mix them together. I didn’t specify measurements for ingredients because everyone’s taste buds are different, so eyeball the measurements to your liking.

Now it’s time to assemble our wrap!

  • Place the spinach wrap on a flat surface
  • Add shredded lettuce
  • Drizzle on the spicy mayo, but not all of it because we’ll need to use more later
  • Sprinkle on the mozzarella cheese
  • Slice your salmon patty and add it on top of cheese (this will melt that cheese underneath)
  • Drizzle on more spicy mayo
  • Add diced tomato, red onion, and carrots
  • Wrap it up and eat!
